INGREDIENTS

  • 1 lb. strawberries, trimmed + more for garnish
  • 1/2 cup sugar
  • 1/2 tbsp lemon juice
  • 1/2 tsp salt
  • 3 eggs, separated
  • 3 tbsp Baileys Vanilla Cream Coffee Creamer
  • 1 cup heavy cream
  • 1 1/2 tsp vanilla

DIRECTIONS

  • Purée strawberries in a blender until very smooth, about 2 minutes.
  • Transfer to a 4-qt. saucepan
  • Add sugar, lemon juice, salt and three egg yolks; whisk until smooth.
  • Place saucepan over medium heat and bring to a simmer. Cook, whisking occasionally, until thickened, about 15 minutes
  • Transfer to a large bowl and stir in 3 tbsp of Baileys Vanilla Cream Coffee Creamer, then refrigerate until cold (about 30 minutes).
  • Whisk 3 egg whites in a bowl until stiff peaks form; gently fold into strawberry mixture, then set aside.
  • Whisk heavy cream and vanilla in a bowl until stiff peaks form; gently fold into strawberry mixture until combined.
  • Spoon mousse into serving cups, chilling before serving. Garnish with your favorite toppings and serve immediately or refrigerate for up to one day.
